ADOUT FARM
The historic Mooleh Manay estate is located in the Chikmagalur mountains of southern India — the region where the country's commercial coffee industry was born. The farm is managed by families who care about preserving the unique ecosystem of the Western Ghats: they maintain the pristine forest canopy, do not cut down endemic tree species, and use organic farming methods so as not to disrupt the fragile balance of the local flora and fauna.
The special feature of this lot is the 100% Excelsa variety, a rare coffee species distinguished by a complex, slightly tart, and fruity profile atypical for standard Arabica. The coffee grows in the shade of nutmeg, cardamom, and black pepper trees at an altitude of about 1200–1400 meters. For this lot, a yeast-inoculated natural anaerobic process was used (84 hours in an oxygen-free environment). The cherries are dried on sun patios right in their skin, forming a unique, deep terroir-driven profile.
