In the Colombian province of Antioquia, the Resinas project is born, where local farmers are consciously reviving traditions of deep respect for the land. After decades of intensive farming that depleted the soils, the region's coffee community came to the understanding that long-term quality is impossible without restoring the ecosystem. They abandoned chemicals, returned to organic fertilizers, and began recreating forest canopy on the plantations to return natural fertility to the soils.

On these hilly landscapes at an altitude of 1500–1800 meters grows the rare Papayo variety — a unique Colombian variety believed to descend from Ethiopian varieties, famous for its delicate, floral profile. The secret to creating this coffee lies in the Fully Washed process with an innovative approach: farmers use a double fermentation method and careful slow drying on Raised Beds. This allows the bean's natural sugars to caramelize and microorganisms to develop a complex flavor profile without excessive harshness.
