The highland district of Gowa Malino on the island of Sulawesi in Indonesia is a place where plantations are situated at an altitude of 1400–1600 meters, surrounded by tropical jungles and volcanic slopes. Local farmers, representing small communities, take advantage of their unique microclimate: an abundance of moisture and cool mountain winds that make the bean exceptionally dense.

Here grow the ancient varieties Typica and Linie S (a local mutation of Typica), which are valued for their cup clarity and classic sweetness. Unlike the classic Indonesian semi-washed process, this lot utilizes a modern washed anaerobic fermentation method. The cherries are depulped, and then the beans are placed in sealed tanks for 48 hours without oxygen, after which they are washed and dried on patios. This allows for a crystal-clear profile, preserving the density characteristic of Sulawesi but ridding the coffee of harsh, earthy notes.
