Fazenda California is an iconic farm in the state of ParanĂ¡, managed by Luiz Saldanha. Located on the Tropic of Capricorn line at an altitude of about 1100–1200 meters, the farm is famous for its cool microclimate. Because of this, the coffee cherries ripen slowly, accumulating high density and natural sugars. The Saldanha family adheres to the principles of biodynamic farming: rejecting chemicals in favor of natural composts and careful treatment of the soils make this project a model of eco-friendly and high-tech production.
For this lot, classic Brazilian varieties were selected: Catuai, Mundo Novo, and Obata. Natural processing was applied, where ripe cherries are dried in the sun directly in their skin. Thanks to modern climate-controlled drying chambers and meticulous sorting, the classic Brazilian base reveals itself especially brightly. The cup yields a dense, balanced profile with notes of nougat, caramel, plum, and hazelnut.
