Huila is one of the most prestigious coffee regions in Colombia, located in the south of the country, surrounded by mountain ranges. The snowy volcanic peaks feed local rivers, and the volcanic soils at altitudes of 1500–1900 meters provide an ideal foundation for nourishing coffee trees. Local farmers, owning small plots, conduct selective harvesting. The contrast between hot days and cool nights slows down the ripening process, increasing the density of the bean.
The classic Caturra and Typica varieties grow on these highlands. For this lot, Natural processing was chosen: ripe cherries are dried on raised African beds without removing the skin, giving the beans the maximum of their natural sugars. This creates a deep, fruity, and simultaneously balanced profile with bright notes of strawberry, apple, and juicy citrus acidity.
